&          Balsamic Drizzle

 INGREDIENTS
1/4 cup olive oil
6 New York strip steaks (about 6 to 7 pounds)
1 cup Grella Grilling Rub
½ cup Balsamic Honey Glaze

 

 

Pre heat the grill. As the grill is preheating rub both sides of the steak liberally with the Grella Grill rub. Brush the hot grill with the remaining olive oil and add the steaks (about 8-10 minutes per side). Remember to leave the steaks for 3 minute intervals before touching. Grill 3 minutes on first side, then turn 90° grill for another 3 or 4 minutes depending on thickness of steaks. Flip and repeat. This creates a beautiful cross hatch pattern, just like a high end steak house. While the steaks are cooking prepare the balsamic glaze.

Grella Porcini Grilling Rub

1 cup brown sugar
2 tablespoon sea salt
2 tablespoon dried paprika
4 tablespoon dried porcini mushrooms (ground into a powder)
1 tablespoon ground white pepper
1tabelspoon ground cayenne pepper
2 teaspoons granulated garlic powder 

In a small bowl Mix all ingredients together. When the spice rub is not in use store in an air tight container.

 

Balsamic Honey Glaze

1 cup balsamic vinegar
2 tablespoons of honey

In a small sauce pan add the vinegar and cook over medium heat. With a wire whisk slowly add the honey and bring to a low boil. Allow the mixture to reduce by about one third until it reaches syrup like consistency. *If you have real 20 year old or better aged balsamic vinegar, that is preferred, but in a pinch make the glaze.
